This watermelon radish salad with crumbled feta is a super easy, healthy, and incredibly flavorful side dish that comes together in minutes! It’s also one of those no-recipe recipes, so I’m mainly sharing how to prepare it. This dish is packed with vitamin C and antioxidants from the radishes, and screams springtime with the bright colors and flavors!
Note that my Whole Foods had monster sized organic watermelon radishes, but they aren’t always as big as the ones I used. Watermelon radishes come in a variety of sizes, so just use whatever you find. I use this preparation for all varieties of radishes, but it is prettiest with the watermelon variety. This watermelon radish salad with crumbled feta is also amazing on top of crusty bread, with a side of avocado, or as a topping for avocado toast. (I’m a millennial, I had to throw avocado toast into the mix!)
Watermelon Radish Salad with Crumbled Feta Ingredients:
- Watermelon radish (I used part of one large watermelon radish, but you could use small or medium sized radishes. Just go with whatever you find at the store)
- Olive oil
- Fresh squeezed lemon juice
- Everything bagel seasoning (I get mine at Trader Joes but someone recently mentioned that Costco started carrying it too)
- Crumbled feta cheese
Start by washing your radish(es) and slicing them very thin. I used a mandolin for this and cut them a little thinner than 1/8 of an inch thick, but you can also use a sharp knife to slice them thin.
Next, arrange the radish slices on your serving dish, drizzle with olive oil, squeeze on some fresh lemon juice, and top with the everything bagel seasoning and crumbled feta. IT’S THAT EASY!
