Shaved Celery Salad with Walnuts, Dates, and Parmesan

I first learned about a shaved celery salad from Bon Appetite Magazine. My first thought is that a celery salad sounded weird, but I was still intrigued so I decided to try making one at home. I’m so glad that I did because this shaved celery salad with walnuts, dates, and parmesan has become one of my favorite lunch recipes!

This shaved celery salad with walnuts, dates, and parmesan is a riff on the original recipe based on my preferences and what I had in the house. It comes together super quickly, travels well because the celery doesn’t wilt like regular salad greens, and is super filling. I know, you’re probably thinking that celery doesn’t sound filling at all, however the dates, walnuts, and parmesan in this salad add in enough nutrients that you’ll definitely feel satisfied. All the different textures make this salad the perfect lunch or refreshing side dish!

Shaved Celery Salad with Walnuts, Dates, and Parmesan Ingredients (makes one salad)

  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon real maple syrup
  • 2 teaspoons oil (I prefer avocado oil, but you can use any oil you like)
  • 1 medjool date, pitted and chopped into small pieces
  • 1 heaping tablespoon of chopped walnuts
  • 3-4 stalks of celery, washed and thinly sliced
  • Shaved or grated parmesan to taste

Start my making the dressing. I like to make my dressing in the bottom of the salad bowl then toss everything together in that same bowl for easy clean up.

Whisk the mustard, lemon juice, maple syrup, and oil in a bowl until it’s emulsified and you get a nice dressing. Note that I prefer to use avocado oil because it has a very light flavor, but you can use any oil you like. Olive oil is always a safe bet, or you could experiment with something like walnut oil to see what you prefer. Once the dressing comes together, taste it and season with salt and pepper as needed.

Next, wash you celery and slice it thinly. I like to cut it on a diagonal so you get wider pieces, but it really doesn’t matter. Just make sure that your celery slices are all about the same size. That way you won’t get some giant pieces of celery and some super thin pieces. I usually aim to make my slices about 1/8 of an inch thick.

Add the celery into the bowl with the dressing along with the chopped walnuts and the chopped date. Mix everything to combine so the dressing evenly coats all of the salad ingredients. Transfer to a plate and top with as much grated or shaved parmesan as you’d like.
