My Favorite Vanilla Smoothie

This vanilla smoothie recipe is creamy, delicious, and filling. It fights any sweet tooth cravings, and is actually loaded with vegetables! Sounds too good to be true right?

As the weather gets warmer, smoothies are a great light and refreshing snack option. The problem is that many smoothie recipes out there are packed with sugar. Yes, fruit is good for you, but when you’re drinking a smoothie with 50+ grams of sugar, it’s not that much better than drinking a big soda. The ingredients in this vanilla smoothie sound a little weird, but trust me and just give it a try. You’ll probably be very surprised!

Vanilla Smoothie Ingredients

  • ½ cup frozen riced (or finely chopped) cauliflower
  • ½ cup unsweetened vanilla almond milk
  • ½ banana
  • ¼ tsp vanilla extract
  • 1 tsp ground flax seeds
  • 1 tsp 100% pure maple syrup
  • ¼ cup water

For the cauliflower, you want raw cauliflower that has been finely chopped and frozen. You can do this yourself, but I usually just buy the bag of riced cauliflower from Trader Joes and keep it in the freezer.

Add everything to your blender (I use my nutribullet) and blend until smooth. I usually let it blend for 30 seconds to a minute to get it really smooth. If you want this vanilla smoothie to be picture perfect, or just feel like adding some extra texture to your drink, you can spread a bit of maple syrup on the rim of your glass and dip it in slivered almonds like I did. This vanilla smoothie is perfect for a snack, and is a great way to sneak extra vegetables into your diet!
