Healthy Chocolate Chip Cookie Dough Energy Bites

Healthy chocolate chip cookie dough energy bites. Need I say more? Get the best of both worlds by eating chocolate chip cookie dough that is actually healthy and packed with protein!

These healthy chocolate chip cookie dough energy bites come together quickly in a food processor, keep well in the fridge, and are a delicious snack or sweet treat! They’re boyfriend approved, so I know they’re good.

Healthy Chocolate Chip Cookie Dough Energy Bites

  • 1/3 cup almond flour or almond meal (I usually use almond meal because it’s less expensive)
  • 1/3 cup raw shelled hemp seeds
  • 2 scoops of collagen powder (I like Vital Proteins)
  • 3 tablespoons high quality maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter (you can omit this or swap for coconut oil but it makes the “cookie dough” taste more authentic)
  • Pinch of kosher salt
  • 2 tablespoons mini chocolate chips
  • ¾ cup semi-sweet or dark chocolate chips

Start by making the cookie dough. Add the almond meal, hemp seeds, collagen, maple syrup, vanilla, butter, and salt to the bowl of a food processor and pulse until everything comes together into a sticky batter. Note that the batter will be very sticky, but that’s okay as long as everything is combined.

Transfer the cookie dough to a bowl and mix in the 2 tablespoons of mini chocolate chips, then let this chill in the fridge for at least 10 minutes.

Using a 1 ¼ inch cookie scoop or a spoon, scoop out dollops of dough and roll into balls. This recipe makes about 12 healthy chocolate chip cookie dough energy bites. Once you’ve scooped out all the dough, place the energy bites back in the fridge while you melt the remaining chocolate.

Note*** you could totally eat these as is, but everything is better coated in chocolate, and a little dark chocolate won’t hurt you. Plus, it makes these feel much more indulgent than they are.

Place the remaining chocolate chips in a microwave safe bowl and microwave for 20 second intervals, stirring the chocolate after each interval until it is smooth and glossy.

Line a plate or cookie sheet with parchment paper. Using two forks, drop each energy bite into the melted chocolate one or two at a time, roll each of the balls in the melted chocolate, and let the excess chocolate drip off. Place each chocolate coated ball on the parchment paper and let the chocolate coated energy bites set up in the fridge.

These healthy chocolate chip cookie dough energy bites should be stored in the fridge for maximum freshness and will keep for about a week. Enjoy!
