One of my favorite things about Fall is that butternut squash comes back into season. I often dice and roast a whole butternut squash and keep it in the fridge to cut down on prep time for various meals. One of my favorite lunches is this delicious Fall butternut squash and balsamic salad. Packed with nutrients and flavor, this salad is light, yet still hearty. It has great texture, and is as simple as can be to make!

Ingredients:

  • 1 tbs balsamic
  • 1 tbs olive oil
  • 1 tsp Dijon mustard
  • ½ tsp honey
  • Salt and pepper to taste
  • 1 cup of your favorite lettuce (I use trader joe’s power greens blend)
  • 1/3 cup roasted and diced butternut squash
  • 2 tbs chopped walnuts
  • 1-2 tbs crumbled blue cheese

First make the dressing. In a large bowl, combine oil, vinegar, honey, mustard, salt and pepper to create an emulsified dressing. The mustard and honey help everything come together, so it should be simple to combine with a fork. Next, add in the lettuce, squash, walnuts, and blue cheese, and you have a delicious and nutritious meal! For larger or more filling meals, I’ll often add leftover chicken as well, and remember, if you don’t like blue cheese, add in whatever you like! Enjoy!
