In honor of yesterday’s National Grilled Cheese Day, and all the leftover matzah around, I would like to present you with one of the most delicious versions of a grilled cheese. This Passover friendly version will please anyone, Jewish or not, with it’s delicious compilation of flavors and textures. Simple to make, and easy to love, I’m sure this will become a new Passover (or year round) staple.
Ingredients:
- ¼ cup your favorite white wine (I used a sauvignon blanc)
- 2 pieces of matzah
- ½ cup (or more) of your favorite cheddar cheese (I used an Irish stout cheddar
- 1 tbs butter
In a shallow baking dish, add the wine and dunk the matzah to moisten, but not completely drench. It should become slightly pliable and moist from the wine, but not soggy. Do not let it sit for too long in the wine.
Next grate the cheese and put it in between your two pieces of matzah. Get a non-stick pan hot and add the butter. Sauté the grilled cheese until nicely browned on both sides, cheese is melted, and the outside of the matzah is slightly crispy. Slice and enjoy this decadent treat!
