Charred Cauliflower Tacos

Taco Tuesday is a weekly event in my home, so I’m always trying to come up with new taco creations so we don’t get into a taco rut. I was inspired by a recent episode of Barefoot Contessa to use the veggies I had around the house to create a meat free taco option. These charred cauliflower tacos are savory, spicy, healthy, and totally filling. I love meat, but these tacos make me feel like I could go vegetarian! Even my boyfriend gobbled them up and felt completely full and satisfied afterwards. Best of all, these take only a few minutes to make and are a delicious and easy dish that you can whip up any day of the week.

Note*** I used flower tortillas and garnished them with queso fresco, however these charred cauliflower tacos could be made completely vegan and gluten free by omitting the cheese and using corn tortillas!

Charred Cauliflower Taco Ingredients:

  • ½ head of large cauliflower
  • ½ tsp ground cumin
  • ¾ tsp chili powder
  • ½ tsp ground or crushed coriander
  • ¼ tsp kosher salt
  • 2 tbs canola oil
  • Tortillas, guacamole, queso fresco, and cilantro for serving

Start by chopping your cauliflower. You want to chop the florets into relatively small pieces so they get nice and crispy. Go for about ¼ – ½ inch chunks. Once the cauliflower is all cut, start heating your oil in a nonstick skillet.

When oil gets hot, add in your cauliflower and seasoning. Toss to coat and let the cauliflower cook in one even layer, stirring it every few minutes. Sauté the cauliflower until it’s tender on the inside and brown and crispy on the outside. The best part about these tacos are the crispy brown bits!

Once the cauliflower is brown, heat up your tortillas. I like to char mine directly on the gas range, and serve your charred cauliflower tacos with the garnishes of your choice. I chose to go with guacamole, queso fresco, and cilantro, however tomato and onion would also be delicious on these.
