I’m always looking for a quick snack or something easy to put out with cheese when guest come over, and these sweet and savory spice roasted peanuts are fantastic! Most people have a sweet tooth or a salt tooth, but I definitely have both! I love the combination of sweet and salty, along with the crunchy and full bodied flavor that rosemary gives to the nuts.
These sweet and savory spice roasted peanuts come together in minutes, and will be gobbled up just as fast! Whether you’re looking for a yummy snack to keep on hang, or for an easy appetizer to serve with drinks, these are for you!
Ingredients:
- 1lb bag of lightly salted roasted peanuts (I love the ones from Trader Joes)
- 1 egg white
- 3 tbs packed brown sugar
- 1/8 – ¼ tsp cayenne pepper
- ¾ tsp dry ground rosemary
Preheat oven to 400 degrees.
Start by whisking the egg white until it’s foamy. You’re not trying to whip it up so it gets bigger, but you’re just trying to get it foamy and light so you can easily coat all of the peanuts.
In a separate bowl, mix together the cayenne pepper, brown sugar, and rosemary. Pour the peanuts into the bowl with the egg whites and mix so they’re all evenly coated. Next add in the dry ingredients and mix again so that the peanuts have a nice and even coating of everything.
Line a baking sheet with parchment paper and spray with some cooking spray to make sure nothing sticks. The peanuts are coated in a sugar mixture, so you want to make sure they don’t get stuck on the pan! Spread the nuts out in one even layer, and bake at 400 degrees for 8 minutes. Take them out of the oven, and with a spatula, move them around and break up any nuts that have gotten stuck together. Bake for an additional 2-3 minutes until nuts are golden and crunchy.
Set them aside to cool, and then continue to break up nuts that got stuck together. These sweet and savory spice roasted peanuts can be served warm, or at room temperature, and can be stored in an airtight container or zip lock bag. Enjoy!
