Black Bean Brownies

Brownies are a childhood classic, and who doesn’t love a fudgy treat as an adult? These power packed black bean brownies are rich, fudgy, delicious, and much healthier than a traditional brownie. The best part? They’re super easy to make and use items you probably already have in your house!

The black beans add protein and lend to the fudgy texture, making these the perfect treat for the health conscious chocolate lover.

Black bean brownies:

  • 1 can black beans, rinsed and drained
  • 2 tbs nonfat plain Greek yogurt
  • 3 tbs avocado or coconut oil
  • 2 eggs
  • 1 cup cup unsweetened cocoa powder
  • 2/3 cup raw sugar
  • 2 tbs maple syrup
  • 1/2 teaspoon instant coffee or espresso
  • 1 teaspoon vanilla bean paste
  • 1/2 cup chocolate chips, melted
  • 1/3 cup flour
  • 1/2 teaspoon baking powder

Preheat oven to 350 degrees.

Start by blending brownies, yogurt, oil, eggs, and sugar until smooth. Next mix in maple syrup, instant coffee, and vanilla bean paste.

In a separate bowl over a double boiler, melt chocolate until it’s smooth. Mix that into the black bean mixture. In a separate bowl, mix the dry ingredients, then add them into the wet mixture, 1/3 at a time.

Line a 9×13 inch baking dish with parchment paper and spray with cooking spray. Pour the brownie mixture into the dish and spread it out into as even of a layer as possible. It will be thick, so do your best.

Bake the black bean brownies at 350 degrees for 12 minutes until a toothpick comes out clean and you can smell the chocolate. Let them cool, and enjoy!
