These peanut butter chocolate energy bites basically taste like chocolate peanut butter truffles! I recently came across some packaged energy bites at Trader Joes, and they were good but I quickly realized that I could create a very similar product at home. Making these peanut butter chocolate energy bites at home lets you control the ingredients, and it is way less expensive than buying them premade. You can easily swap out the peanut butter for another kind of nut butter or sunflower seed butter, and if you use vegan chocolate, these are completely vegan! Additionally, they are boyfriend approved and easily transportable!
Ingredients for the peanut butter chocolate energy bites:
- ½ cup natural salted creamy peanut butter
- 1/3 cup raw shelled hemp seeds
- 2 tablespoons chia seeds
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 4 tablespoons pure maple syrup
- 2 scoops of collagen powder ***optional
- ¾ cup semi-sweet chocolate chips
This recipe is so simple! To make the peanut butter chocolate energy bites, add all ingredients but the chocolate chips to the bowl of a food processor and pulse until you get a consistency that looks like wet sand. It will be a little crumbly but should hold together. See picture below.
Once you’ve combined everything, scoop out small amounts of the mixture and roll into little balls. You should get about 18-20 peanut butter chocolate energy bites. I used a 1 ¼ inch cookie scoop to ensure that they all came out the same size. Place the peanut butter chocolate energy bites on a plate and refrigerate for about 30 min. This will help them set up and will ensure that they don’t melt when you dunk them in the chocolate.
Once the peanut butter chocolate energy bites have chilled in the fridge, place the chocolate chips in a microwave safe bowl and microwave for 20 second intervals, stirring the chocolate after each interval until it is smooth and glossy.
Line a plate or cookie sheet with parchment paper. Using two forks, roll each of the balls in the melted chocolate and let the excess chocolate drip off. Place each chocolate coated ball on the parchment paper and let it set for about an hour. You can place them in the fridge to set up faster if you’d like. Store these peanut butter chocolate energy bites at room temp or in the fridge in an airtight Tupperware container for about a week. They are perfect for a sweet treat or energy packed snack on the go!
