Cesar salad is a classic and delicious dish, but it’s also very caloric. I wanted to come up with a version that is just as tasty but a lot easier on the waistline, so I developed this lightened up Cesar dressing recipe. If you haven’t figured it out yet, I use Greek yogurt for everything, and this lightened up Cesar dressing is no exception. The yogurt gives it a wonderful creamy texture with a bit of tang that plays well off the classic savory notes.
Rejoice in the fact that you can add in those croutons and enjoy them because the dressing is a lot lighter than normal.
Lightened up Cesar Dressing Ingredients:
- 1/3 cup plain nonfat Greek yogurt
- 1 ¼ tsp Worcestershire sauce
- ¼ tsp Dijon mustard
- 1/8 tsp anchovy paste
- ½ tsp lemon juice
- ¼ tsp garlic powder
- 1/3 cup finely grated parmesan cheese
- Salt and pepper to taste
The recipe really couldn’t get easier. Mix all ingredients in a bowl until smooth and creamy! This is a thick dressing, so if you want to thin it out, add in a teaspoon or 2 of water until you’re happy with the consistency. This makes a good amount of dressing, so if you have extra leftover, simply store it in a Tupperware or mason jar in the fridge. This will keep for about a week, and can be used for anything you would use a traditional Cesar dressing for.
To make the salad as pictured, toss with romaine lettuce, croutons, and fresh shaved parmesan for a decadent tasting meal! This lightened up Cesar dressing is a great way to watch what you eat and still enjoy some of the indulgent flavors you love.
