It’s been so hot and humid that I can’t even think about eating anything heavy. This protein packed, super light, and healthy meal is so packed with flavor that you’ll forget about how healthy it is. Perfect for this Indian summer or a simple weeknight meal, these healthy turkey lettuce wraps are sure to make your regular meal rotation!

Ingredients:

  • 5 baby bell peppers
  • 3 green onions
  • 1 cup white mushrooms
  • 2 cloves of garlic
  • 1 tsp dry ground ginger
  • 5lb ground lean turkey
  • ¼ cup low sodium soy sauce
  • 3 tbs honey
  • 3 dashes fish sauce
  • Juice of 1 lime
  • Pinch of chili flakes
  • 1 tbs mustard
  • 3 tbs flavorless oil sucha s avocado or canola
  • 1 head iceberg lettuce

Chop green onions, bell peppers, and sauté in oil. While those are sautéing, chop mushrooms and add those in next, letting everything come to a golden color. Next add in the ground turkey and use wooden spoon to scrape brown bits from the bottom of the pan and break up turkey meat. Add in ground ginger and continue to sauté.

In a separate bowl, mix garlic, soy, honey, fish sauce, and mustard. Once turkey is cooked, add in the sauce and cook for an additional 5 minutes, stirring continuously so nothing burns and the flavors meld together. Finish it off with the lime juice, and you’re done!

Separate lettuce leaves, and spoon turkey mixture into them like tacos. Garnish with cilantro and enjoy!
