I bet you never thought of lentils as a food that could be so delicious that they’re addicting. Well, I’m here to change that! These green lentils with garlic, lemon, and coriander are so good (and simple to make) that they’ll become your new favorite snack.
Lentils are a great source of fiber and protein, and are an easy and budget friendly way to bulk up your diet without animal products. This recipe is 100% vegan, gluten free, and perfect for anyone interested in clean eating. These green lentils with garlic, lemon, and coriander are packed with flavor and act as a great snack on their own, or as an addition to salads and soups.
Note** This recipe makes about 2-4 snack size servings, but I often make a bigger batch and keep them in the fridge so I have them on hand. They do take a bit longer to cook, so it’s a great idea to have them ready when you want them.
Green Lentils with Garlic, Lemon, and Coriander Ingredients:
- ½ cup whole green lentils
- 2 large cloves of garlic
- 1 tbs olive oil
- ½ tsp lemon zest
- 1 tsp ground or crushed coriander
- ¼ tsp kosher salt
- 1 ½ cups water
Start by chopping your garlic and lemon zest. Add the garlic, lemon zest, salt, and coriander to your oil in a sauce pot and sauté for a minute or two until everything is fragrant. Add in your dry lentils and sauté them for an additional minute or two. You want to make sure the lentils get coated with the oil mixture and toast in it.
Next, add in your water, and bring the whole thing to a boil. Once boiling, reduce heat to low and cover your pot. Simmer for 35-40 minutes (mine took 40) until the lentils are tender and the liquid is evaporated. These green lentils with garlic, lemon, and coriander can be served hot, cold, or at room temperature.
