Five Ingredient No Bake Granola

This five ingredient no bake granola is simply delicious. It’s a hearty no fuss breakfast that comes together in minutes. Since it’s gluten free, refined sugar free, and vegan, it will please even the pickiest of eaters. You absolutely could add other ingredients if you’d like, however I wanted to create a simple granola that’s low in sugar but packed with flavor and nutrients.

Note that I used walnuts for this recipe, but you could use whatever nuts you like, and if you want to make this five ingredient no bake granola nut free, you could just leave out the nuts or swap them for coconut.

Five ingredient no bake granola

  • ¼ cup pitted medjool dates (about 5 dates)
  • ¼ cup melted and cooled coconut oil
  • 1 ¼ cup rolled oats
  • ½ cup chopped walnuts (or your favorite nuts)
  • 1/8 tsp kosher salt

Start by placing the oats and chopped walnuts in a dry sauté pan over medium heat. Toast the oats and walnuts until they are slightly golden and fragrant. This will take about 5-8 minutes. Make sure you watch them and stir the oats and nuts in the pan so they don’t burn. Set aside.

While the oats and walnuts are cooling, add the coconut oil, pitted dates, and salt to a food processor and pulse until the dates are finely chopped. The dates and oil won’t really come together, but that’s okay. See picture below.

Pour all ingredients into a bowl and mix to combine. I find that this works best with your hands, as you want to really mix everything so the dates bind with the oats to form clumps like a traditional granola. Once everything is incorporated, let the granola cool completely, then store in an airtight container at room temp.

If you want to make this five ingredient no bake granola raw, you can just omit the step of toasting the oats and nuts. This step is solely to add more flavor.
