Creamy Miso Slaw

If you haven’t figured it out by now, I’m a big fan of cabbage slaws. They have great texture and flavor, plus they are nutritious and super filling. This creamy miso slaw comes together in seconds, is completely guilt free, and makes a great healthy and filling lunch. This recipe serves one, but you could absolutely make it in bulk for dinner or to serve at a party!

Creamy Miso Slaw Ingredients:

  • ¼ tsp white miso paste
  • ¼ tsp raw honey
  • ½ tsp Trader Joes garlic dip or one small clove of garlic, crushed
  • ¼ tsp lime juice
  • 2 tbs plain, 2% Greek yogurt
  • 1 ¼ cup shredded cabbage or coleslaw mix (I use the shredded purple and green cabbage mix from Trader Joes)
  • 1 tbs sliced almonds
  • Sliced green onion and sesame seeds for garnish (optional)

If you’re not familiar with miso, it is a fermented soybean paste, most commonly eaten as miso soup at Japanese restaurants. Miso paste is strong, and a little goes a long way, but it’s a great way to add a ton of flavor to any meal. Note that it is very salty on its own, so don’t add extra salt when you use it.

Mix the miso, honey, and garlic together until it is fully combined. Next, add in the Greek yogurt and lime juice and mix to create a creamy miso dressing. This can be used for a bunch of different salads, on sandwiches, or even as a dip for veggies!

Next, add in the shredded cabbage and almonds and mix so that everything is nicely coated. If you’d like, you can garnish this creamy miso slaw with sliced green onions and sesame seeds, or you can serve it plain. Just a few simple steps and this creamy miso slaw is ready to go! It packs well, so it’s a great option to pack for lunch or to take to a summer party.
