These coconut lime drop cookies pack all the flavors of summer into one perfect bite. The richness of the coconut pairs perfectly with the tangy lime, and best of all is that these come together in minutes! They’re vegan too, so it’s a great option for any of your not animal eating friends!
Coconut Lime Drop Cookies
- ½ cup coconut oil
- Zest and juice of one lime
- ½ cup powdered sugar + more for dusting
- Pinch of salt
- ½ tsp vanilla bean paste
- ½ cup all-purpose flour
- ½ cup coconut flour
- ¼ cup unsweetened shredded coconut
Preheat your oven to 350 degrees
In the bowl of a mixer, cream together the coconut oil, ½ cup powdered sugar, lime zest, lime juice, and vanilla bean paste. It works best if the coconut oil is at room temp and slightly on the warm side so it has the same consistency as room temperature butter.
Once everything is well mixed, add in the flours, ½ cup at a time, and stir until everything is just moist and combined.
Line a baking sheet with parchment paper or silicone baking mat, and use a 1 ½ – 2 inch diameter cookie scoop to scoop cookie dough onto baking sheet.
NOTE*** You want to make sure and pack the cookie dough into the scoop before scooping it out. This is a fairly dry dough, so you need to pack it together to get the cookie right. You can also add a teaspoon or two of water if the dough is too dry and not coming together well.
Once you have all of the cookies scooped out on your baking sheet, press the balls of cookie dough down slightly with your fingers to flatten them a bit. These cookies will not spread out or cook down, so you want to make sure they actually have a cookie shape prior to baking them. This recipe makes about 24 cookies.
Bake at 350 degrees for 8 minutes until the edges are just lightly browned.
Let the coconut lime drop cookies cool for about 10 minutes, then sift powdered sugar on top of them. You can use as much or as little as you want. These come out crumbly and not too sweet, with a punch of tangy lime and rich coconut. These will instantly transport you to the islands!
