These coco mango yogurt pops are the perfect way to cool down from the early summer heat. They are delicious, refreshing, and completely guilt free! The best part is that they come together in minutes, and require only five ingredients that you probably have most of at home. Because the base of these is Greek yogurt, you get an added bonus of protein, so these coco mango yogurt pops will keep you full too.
They’re perfect for kids and adults alike! This recipe makes four popsicles, but you can double or triple it for a crowd.
Coco Mango Yogurt Pops:
- 1 cup of mango chunks (I used frozen mango that I thawed)
- ½ cup plain 2% Greek yogurt
- ½ cup water
- 1 tbs honey
- ¼ tsp coconut extract
I’ve talked about coconut extract before, and this stuff is like magic. It adds an amazing tropical flavor with just a tiny bit of it, which is perfect for these yogurt pops.
For these coco mango yogurt pops, I used frozen mango that I thawed, but you can use fresh mango too. If you do choose to go with frozen mango like I did, it’s very important that you let it thaw to room temp or nuke it in the microwave. You want the mango to be soft so it blends into a smooth consistency for the popsicles.
This is how simple it is. Blend everything until smooth, and pour into your popsicle molds. It’s that easy! I froze mine overnight, but you could probably get away with freezing these for only 3-4 hours depending on your freezer.
Enjoy!
