Corn is extremely sweet and delicious during the summer, so I wanted to take advantage of this and make a charred corn salsa. This charred corn salsa comes together in minutes and is a great addition to tacos, or to just eat with tortilla chips.
Every ingredient is pretty much a pantry staple for me, so it came together really quickly. If you don’t have an ingredient or have something similar, just make a swap and use what you have! That’s the beauty of salsa!
- 2 ears of corn (husks and silk removed)
- 1 jalapeno
- 1 shallot
- 1 cup cherry tomatoes
- Juice of 1 lime
- 1 tbsp fresh chopped cilantro
- Kosher salt to taste
Start by charring the corn. I did this in a dry cast iron skillet with no oil, but you could do this under the broiler if you don’t have a cast iron.
If you are using the cast iron pan, place the two cleaned ears of corn (no husks or silk) in the cast iron pan over high heat. Let them get some dark brown bits on them, and flip the corn until every side of it has some golden brown or black bits of char on it.
Remove the corn and set aside.
Next place the cherry tomatoes and the jalapeno in the pan and repeat the same process until the tomato and jalapeno skins are blistered and have black bits on them.
Remove the tomatoes and jalapeno and set aside.
Slice the shallot in half and place the cut side down in the cast iron skillet until it gets nice and charred.
Note** If you want to use your broiler, place everything on a baking sheet lined with aluminum foil and place under the broiler until charred and golden brown bits appear. Flip until all sides get color, then remove from broiler.
Once all of the vegetables are charred, slice the corn off the cob, and roughly chop the tomatoes. Add them to a bowl big enough that you can mix everything in.
Remove seeds and ribs from jalapeno and chop it up finely. Add it to the bowl with the corn and tomatoes. Next, finely chop the shallot and add it to the bowl.
Mix in the lime juice and cilantro and season with salt to taste. This charred corn salsa is vegan, gluten free, and can be used for a variety of dishes! It’s delicious with chips, and makes chicken tacos more fun! Enjoy!
