Arugula, Goat Cheese, and Pomegranate Salad

It’s that time of year again where pomegranates are everywhere! I found some amazing pomegranates at the farmers market for $1.88 a pound, and they had more of those beautiful little jewels inside than I’ve ever seen! After I cleaned/prepared them (here’s a video that shows you how to do it) I had a nice large Tupperware of pomegranate seeds to store in the fridge, so I set out to use them in as many meals and snacks as I could. I love putting the seeds in my morning yogurt but wanted a savory dish to use them in as well. This arugula, goat cheese, and pomegranate salad is healthy, light, delicious, and super satisfying because it hits a lot of flavor notes. The arugula is peppery, the goat cheese is creamy, and the pomegranate seeds add great crunch and sweetness. Additionally, this salad is full of color which makes it beautiful and super festive.

This recipe makes two side salads or one large salad.

Arugula, Goat Cheese, and Pomegranate Salad Ingredients:

  • 2 teaspoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup
  • One pinch of oregano
  • 1 pinch of kosher salt
  • 1 pinch of black pepper
  • 2 tablespoons of avocado oil or your favorite flavorless oil
  • 2 cups of arugula
  • 2 tablespoons goat cheese
  • 2 tablespoons pomegranate seeds

Start by making the dressing. If you don’t usually make your own salad dressing, I highly recommend it. It’s super easy, way less expensive, and you can control what goes in it.

I always make the salad dressing at the bottom of a mixing bowl, then just add in the salad greens and toss until they’re coated. At the bottom of a mixing bowl, use a fork or whisk to combine the vinegar, mustard, maple syrup, oregano, salt, and pepper. Once everything is well mixed, drizzle in the avocado oil while you continue to rapidly mix with your fork or whisk. Mix the dressing until it’s emulsified into one thick salad dressing.

Add in the arugula and toss to coat. Divide the salad between two plates, then top with the goat cheese and pomegranate seeds. This arugula, goat cheese, and pomegranate salad is perfect for a light lunch, side salad, or even for a get together with friends. Enjoy!
