I’m just going to come out and say it, I’m one of the few people that are not totally obsessed with girl scout cookies. Don’t get me wrong, they’re good, however last time I checked they were filled with ingredients I couldn’t recognize. As a general rule of thumb, I don’t like to eat processed food, and always prefer to eat something made with real, whole ingredients. With that in mind, I decided to come up with a recipe to make these homemade thin mints made with real butter, eggs, flour, sugar, cocoa powder, and peppermint extract!
These homemade thin mints really aren’t hard to make at all, and this recipe makes a lot, (I got about six dozen mini cookies) so you can pass them out to your family and friends!
Homemade Thin Mints
- 1/2 cup butter, softened
- 1 cups sugar
- 1 large egg
- 1/4 teaspoon vanilla extract
- 3/4 teaspoon peppermint extract
- 1/4 teaspoon kosher salt
- 1 3/4 cups all-purpose flour
- 3/4 cup cocoa powder
- 3/4 teaspoons baking powder
- 1/2 teaspoon baking soda
Homemade Thin Mints Chocolate Coating
- 1 cup semi sweet chocolate chips or chocolate chunks
- 1/2 teaspoon peppermint extract
Preheat oven to 350°
In a large bowl, cream butter, salt, and sugar until light and fluffy.
Next, add the egg, peppermint extract, vanilla extract, and salt, and beat until combined.
Sift together the flour, cocoa powder, baking powder, and baking soda, and add to butter mixture in three batches. Dough will be slightly crumbly but will hold together if you squeeze it.
Instead of flour, use cocoa powder to dust your work surface, (this will ensure that your cookies don’t look white and chalky on the outside) and roll out dough to 1/8 inch thick. Cut into circles using a 1 1/2 inch round cookie cutter. Place an inch apart on baking sheets lined with parchment paper or silicone baking mats.
Bake for 10 minutes until cookies feel slightly firm. They will become the right crunchy texture when they cool.
Remove from pans to wire racks to cool completely.
When cookies are cool, add chocolate and peppermint extract to a microwave safe bowl, and microwave for 20 second intervals, stirring the chocolate after every interval until chocolate is melted and glossy.
Flip the cookies over and spread the bottom of each cookie with some of the chocolate. Let the chocolate set up for at least an hour, or until completely set.
These homemade thin mints can be stored in an airtight Tupperware or bag. I like to stack them up in little cellophane bags to give as gifts. These homemade thin mints will curb your girl scout cookie cravings without the added ingredients! Enjoy!
