Show Stopping Parmesan Biscuits

Happy New Year everyone! It’s finally a fresh new year, and what better way to kick it off than with an incredible homemade brunch? I woke up this morning, and for some reason, I was dying for a delicious, flaky, tender, and savory biscuit. Low and behold, these show stopping parmesan biscuits were the first thing I whipped up after rolling out of bed. Let’s note that I did decide to make brunch, but it wasn’t until after waking up at the oh so early hour of 12 noon.

I’m sure a lot of you are just thinking about the food, and not about the writing, so I’ll stop here and let these show stopping Parmesan biscuits do the talking.

Show Stopping Parmesan Biscuits

Ingredients:

  • 2 cups all-purpose flour, plus more as needed
  • 1 tablespoon baking powder
  • 12 tablespoons (1 1/2 sticks) cold salted butter, diced
  • 1/2 cup cold buttermilk, shaken (sub ¼ cup Greek yogurt + ¼ cup milk if you don’t have buttermilk)
  • 1 cold large egg
  • 1 cup grated parmesan
  • 1 egg, beaten for brushing
  • Kosher salt and black pepper for garnish (optional)

Preheat the oven to 425 degrees F.

Place 2 cups of flour, the baking powder, and salt in the bowl of a food processor. Add the butter and pulse until the butter is the size of peas throughout the flour, or resembles a course meal. Add in the grated cheese and pulse to distribute it throughout the meal.

Combine the buttermilk (or yogurt and milk if you’re substituting) and 1 egg in a small measuring cup and beat lightly with a fork. With the food processor on low, quickly add the buttermilk mixture to the flour mixture and mix only until moistened and the dough comes together in somewhat of a ball.

Dump out onto a well-floured board. Roll the dough out to about 1 – 1.5 inches thick. With a round cookie/biscuit cutter, cut out biscuits and place on a parchment paper lined baking sheet. I used a 2.5 inch diameter cutter and it made 12 biscuits.

Brush the tops with the egg wash, sprinkle with salt and pepper if using, and bake for 14-15 minutes, until the tops are browned and the biscuits are cooked through. Serve hot or warm.
