I have a huge sweet tooth, and love having something sweet with my coffee in the morning, but that’s not always conducive to living a healthy lifestyle. I always try to find options that satisfy my desire for a sweet breakfast while still staying healthy, and this 5 minute granola is just that. Admittedly, it does take 15 minutes to bake in the oven, but only takes 5 (or less depending on how fast you are) to throw it together. You literally have to throw all of the ingredients in a bowl, mix, and bake. It couldn’t be any easier. This 5 minute granola is gluten free, vegan, and totally delicious. And best of all? You probably have all or most of the ingredients sitting in your pantry right now!
5 Minute Granola Ingredients:
- 2 heaping cups rolled oats
- 1 cup shredded or flaked coconut (unsweetened)
- ¼ cup chia seeds
- ½ cup sliced almonds
- ¼ tsp kosher salt
- 1 ½ tsp vanilla
- ½ cup honey
- ¼ cup coconut oil
Set your oven to 350 degrees.
Place all dry ingredients in a big mixing bowl, and mix to combine. Don’t worry if some of the ingredients fall to the bottom of the bowl, as they will get evenly distributed during baking. Melt the coconut oil with the honey and vanilla extract, and pour the wet mixture over the dry ingredients.
Mix everything so that the honey and oil mixture coats all of the wet ingredients and evenly moistens them. There you have it. 5 minute granola! Now all you have to do is bake it.
Place the oat mixture on a baking sheet lined with parchment paper or a silicone baking mat, and spread it out into one even layer. Bake at 350 for 10 minutes, then mix the granola around and bake for another 5 minutes until it’s toasty and golden brown.
While this 5 minute granola takes an additional 15 minutes to bake, the preparation is usually the hard part, and this recipe couldn’t be easier. It’s the perfect breakfast or snack to munch on, and it will keep you full while satisfying a sweet tooth.
