Are you sick of the same old turkey sandwich? Want a healthy alternative to excite your taste buds? This super easy Bahn Mi sandwich is loaded with protein, veggies and fiber from the whole wheat bread, and I promise you won’t feel like you’re missing out on a thing! Serve these up for a low key sandwich night dinner or create a bahn mi buffet bar for parties by multiplying the recipe, and setting out all the ingredients for your guests to assemble on their own!
For Pickled Veggies:
- 1 carrot cut into thin slices
- 1, 3 inch piece of cucumber cut into thin slices
- ¼ cup water
- ¼ cup red wine vinegar
- 1 tsp sugar
- 1 tsp salt
- 1 bay leaf
- ½ tsp mustard seeds(optional)
- ½ tsp coriander seeds (optional)
For Pork:
- ½ pork tenderloin (cubed)
- 2 cloves garlic (minced)
- 1 inch piece of ginger (minced)
- 2 tbs soy sauce
- 2 tbs sesame oil
- 1 tbs siracha
For Sauce:
- 3 tbs greek yogurt
- 1 tbs mustard
- 1 tbs siracha
- 2 tbs bbq sauce
- 1 tsp honey
- 2 soft whole wheat sandwich rolls
- Fresh cilantro
Prep Work:
Julienne the carrots and cucumber into thin slices. I find the easiest way to do this is on the mandolin, but you can easily do it by hand too. In a small pot, bring all other ingredients for the pickled veggies to a simmer, then turn off heat and add carrots and cucumber. Let them marinate for at least 15 minutes, or as long as you like.
For the pork, just throw all listed ingredients into a zip lock bag and let sit for at least 15 minutes to marinate.
In a separate bowl, mix all sauce ingredients until well combined. You can do this ahead of time or right before making the sandwiches. It’s really good on a lot of different sandwiches, tacos, etc., so you can even make more and save for later. NOTE*** you can get everything marinating and mixed in the morning, or even the night before, (it’ll take 10-15 minutes total) and have a super easy and delicious dinner prepped when you get home from work!
To assemble sandwiches:
Get a pan really hot, and add a bit of oil to coat bottom. Cook pork cubes until browned and fully cooked through, about 5-10 minutes. Open up rolls, toast them if you like, and then slather generously with the sauce. Next, divide the pork into two portions and layer that on. Next comes the picked veggies, and top with chopped fresh cilantro to taste. Enjoy!
